Chicken Sausage Cabbage Skillet

Ever have those nights where you just don’t feel like cooking?

Plus, you can add a few extras – a Mustard Vinaigrette drizzled at the end (game changer) + a Horseradish Sauce served on the side (optional, but so good), and take this dish to the next level (while still not breaking a sweat).

Servings: 4 | Time: 20 Minutes

Ingredients

Sausage and Cabbage
1 T extra virgin olive oil
12-16 ounces chicken sausages (smoked, kielbasa, spicy, your choice!)
1 pound cabbage, thinly sliced
½ cup white or yellow onion, thinly sliced
Splash apple cider vinegar
Salt and pepper

Mustard Vinaigrette
¼ cup extra virgin olive oil
2 T apple cider vinegar
1 T Dijon mustard
¼ tsp onion powder or garlic powder (optional)
Salt and pepper

Directions

1.) Slice the sausage into ½ inch rounds on the diagonal.
2.) Heat oil in a large skillet over medium heat.
3.) Add sausage and cook until browned on all sides.
4.) Add onion and cook until softened, about 3 minutes.
5.) Add cabbage plus a splash of cider vinegar.
6.) Season with salt and pepper and cook down until cabbage is tender and starting to brown.
7.) While sausage and cabbage cooks, mix together vinaigrette ingredients in a jar and shake to combine.
8.) Drizzle vinaigrette over sausage and cabbage just after taking the pan off the heat.
9.) Serve with optional horseradish sauce on the side.

Optional Horseradish Sauce (Using jarred creamy horseradish works well, too.)
½ cup plain Greek yogurt
1 T prepared horseradish
1 splash fresh lemon juice
Salt and pepper
