Chickpeas, also known as garbanzo beans, are incredibly satisfying and such a great, hearty addition to so many dishes – salads, frittatas, stews, etc. Here, we’re letting them shine as the main event – we promise, you won’t miss the meat!
Servings: 4 | Time: 20 Minutes
Ingredients
Chickpeas
1 T extra virgin olive oil
2 (15 ounce) cans chickpeas
½ tsp chili powder
1 tsp cumin
1/3 cup tomato sauce
Salt and pepper
Romaine lettuce leaves
Hot sauce (optional)
Directions
1.) Drain and rinse chickpeas. Let air dry or use paper towels to rid some of the moisture.
2.) Heat oil in a medium skillet over medium-high heat.
3.) Add chickpeas, chili powder, cumin, salt and pepper, fry until beans are getting a little crisped.
4.) Add tomato sauce and let simmer so it cooks down slightly and caramelizes.
5.) Remove from heat and let cool for 5-10 minutes.
6.) Serve a healthy spoonful on top of romaine lettuce boats.
7.) Top with veggies, drizzle with hot sauce and/or avocado sauce, below.
Optional Avocado Sauce (Or Trader Joe’s makes a great avocado tzatziki sauce that works well here)
Combine 1 ripe avocado, mashed, with ¼ cup Greek yogurt, 3 T extra virgin olive oil, 1 T vinegar, salt and pepper in a jar. Shake vigorously until emulsified. Thin with water, as needed.
